Pasta and Meatballs with Tomato Sauce.

   Ingredients for  Meatballs . 
1. 1 packet of Minced Meat.
2. 1 whole egg.
3. Half a cup of bread crumbs.
4. Powdered Garlic ( you can use fresh ones).
5. Powdered  Rosemary.
6. Powdered Parsley .  
7. Seasoning of choice ( salt, black pepper, Knorr cubes, grill spice)
    

   



    Method for Meatballs 
1. In a bowl add bread crumbs and pour 2-3 table spoons of water. 
2. In the same bowl add whisked egg , minced meat ,spices , herbs and mix all together until is  finely combine . 
3. Mold into balls and put in the fridge for 10-15 minutes.


4. Place a pan on medium high heat and pour 2 tablespoons of olive oil.
5. Fry meatballs until brown on each sides . 
6. Remove pan from fire and prepare for tomato sauce.

   TOMATO SAUCE 
1. Place a pan on medium high heat pour in blended tomato ,canned tomato and paprika into the pan.
2. Fry for 10 minutes , keep stirring occasionally. 
3. Reduce heat to low and gently add  fried meatballs .
4. Add seasoning and 1 cooking spoon of water if too thick for you. 
5. Allow to steamer for 5mins. 
6. Tomato meatballs all done!!


       PASTA ( I used Farfalle type of pasta)
1. Place a pot with 2 big cups of water, add salt  and 2 tables spoon of olive oil.
2. When water comes to a boil, add pasta and allow to cook for 7
minutes.
3. Wash pasta under running cold water .
4. Place on medium high heat with half a cup of water to cook all through for 5 minutes.
5. Pasta is ready to be served with  tomato meatballs sauce.

Orange Rice and Gizzard Sauce(Gravy).

RECIPE FOR ORANGE RICE AND GIZZARD SAUCE.










Ingredients For Rice-:
 2 cups of rice 
1 whole (big) orange
1 cooking spoon of olive oil
1 measuring cup of chicken/ vegetable stock
1cooking spoon of chopped spring onions 
Salt to taste. 
   


   METHOD-:
1. Place a pot medium high heat, put 1 cooking spoon of olive oil in the pot.
2. Put the rice inside (clean rice from package) don't wash rice , toss the rice in olive oil for 5 minutes.
3. Pour chicken stock  and add salt in the rice to cook for 10-12 minutes 
4. At 7 minutes you reduce the heat to low heat and pour half the  juice of squeezed orange inside rice , allow rice to steam cook.
5. When rice is almost done you pour the other half of orange juice inside ,orange zest from the orange and hand full of spring onions .
6.  Orange rice is all  done.
   
        

  INGREDIENTS FOR GIZZARD SAUCE. 
1. 1 kilo of gizzard 
2. 4 whole mushrooms 
3. 2 onions 
4. 3 whole carrots 
5. 1 big paprika 
6. Seasoning ( black pepper, salt, Onga)
7. Corn flour ( thickener) 
    
    METHOD
1.Wash gizzard and put in a pot of water to boil for 10 minutes, add chopped onions and seasoning to taste . 
2. Place a sauce pan on medium heat to sauté chopped onions for 2-3 minutes.
3. Add chopped mushrooms to sauté until tender , golden brown and translucent.
4. Pour 2 cups of water , add seasoning to your taste .
5. Add boiled gizzard and chopped carrots to cook for 7-10 minutes.
6. When almost done , add a cup of mixed corn flour with water and inside, as a thickener.  
7. Add chopped paprika to garnish and cook for 2 minutes .
8. Gizzard sauce  is done and ready to serve .
